Baby Spinach Salad with
Blueberry and Lime Vinaigrette | Printable recipe
This salad highlights the best of summer produce. Using a salty cheese, like feta, in the salad really makes the dressing stand out. It’s also great as a dipping sauce for a last minute fruit platter.
2 – 6 oz. bags baby spinach, washed and dried
1 cup sliced strawberries
1 cup crumbled feta cheese
Blueberry and Lime Vinaigrette
Arrange spinach on a serving platter. Top with strawberries and feta cheese. Serve with Blueberry and Lime Vinaigrette.

Blueberry and Lime Vinaigrette
1 cup fresh blueberries
1/4 cup white balsamic vinegar
zest of 1 lime
1 tablespoon fresh lime juice
1 tablespoon honey
2/3 cup olive oil
Process blueberries and next 4 ingredients in food processor until pureed, about 1 minute. While running, slowly add olive oil to machine.
Yield: 1 1/3 cups
